Sweet Pea Mash

Hi Friends,

Brighten up your plate with this brilliant-green puree. Serve with roasted jumbo shrimp or garlic-rubbed lamb chops.

Ingredients

Serves: 4

3 1/3 cups frozen peas (1 pound)
3 tablespoons water
1/4 teaspoon salt
2/3 cup reduced-fat sour cream
1/4 teaspoon white pepper
1/4 cup minced scallion greens or chives
2 slices bacon, cooked and crumbled

Directions

Heat peas, water and salt in a medium saucepan over medium-high heat, stirring often, until the peas are heated through, 6 to 10 minutes. Transfer to a food processor; pulse with sour cream and pepper until a chunky puree forms. Pulse in scallion greens (or chives) and bacon.

Yogurt-Zucchini Bread with Walnuts

Hi Friends,

This moist, nutty bread is a terrific way to use up late-summer zucchini . The walnuts in the bread are super-heart-healthy, and the yogurt adds moisture without any fat.

Ingredients

Serves: 8

1 cup(s) walnut halves, 4 ounces
2 cup(s) all-purpose flour
1/2 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1/2 teaspoon(s) salt
3/4 cup(s) plus 2 tablespoons sugar
2 large eggs
1/2 cup(s) vegetable oil
1/2 cup(s) fat-free plain Greek yogurt
1 cup(s) coarsely grated zucchini, from about 1 medium zucchini

Directions

1. Preheat the oven to 325°. Butter and flour a 9-by-4 1/2-inch metal loaf pan. Spread the walnut halves in a pie plate and toast them for about 8 minutes, until they are fragrant. Transfer the toasted walnuts to a cutting board and coarsely chop them, then freeze for 5 minutes to cool.

2. In a large bowl, whisk the flour with the baking powder, baking soda and salt. In a medium bowl, mix the sugar with the eggs, vegetable oil and fat-free yogurt. Add the wet ingredients to the dry ingredients along with the grated zucchini and toasted walnuts and stir until the batter is evenly moistened. Scrape the batter into the prepared pan and bake for about 1 hour and 10 minutes, until the loaf is risen and a toothpick inserted in the center comes out clean. Let the loaf cool on a rack for 30 minutes before unmolding and serving.

Mini Red Velvet Cheesecakes

Hi Friends,

Ingredients

Serves: 24

24 mini Nilla Wafers
1 8-oz package reduced-fat cream cheese, at room temperature
1/2 cup powdered sugar
1 egg white
1 teaspoon vanilla extract
1/4 cup reduced-fat sour cream
1/4 cup pureed beets, canned or steamed
2 tablespoons unsweetened cocoa powder

Directions

Preheat oven at 300°F. Line a 12-cup mini-muffin tin with paper liners. Place a Nilla Wafer into each muffin cup.

In a large bowl, beat cream cheese and powdered sugar with an electric mixer on medium speed until smooth. Add the egg white and vanilla, and mix well. On low speed, beat in sour cream until just combined. Reserve 1 cup of the batter and set aside for the swirl or simply beat in the beets and cocoa powder for an all-red cheesecake.

For the swirl, fill each muffin cup halfway with the white batter. Spoon a dot of the red batter on top of each, and with the tip of a knife, swirl the red batter in.

Bake 10 to 12 minutes, until the edges of the cheesecake begin to firm while the center is still soft. Remove cheesecakes from the oven and cool in pan on a wire rack for 30 minutes. Cover and chill at least 1 hour before serving.
